The brand story

Born in Brooklyn, made by hand

BKLYN MACS is a Brooklyn-born macaron brand from co-founders Gene and Rebecca. They pair precise French pastry technique with the curiosity and energy of the borough that shaped them, and they make every macaron by hand, in small batches.

A great macaron, as they see it, is a small act of precision: a delicate, crisp shell, a soft and tender center, and a filling that tastes exactly like it should. Then they let Brooklyn in. The fillings are developed in-house, each treated as its own recipe, with flavors that run from the familiar to Tiramisu, Sparkling Yuzu and Candied Pecan Miso.

You will find the co-founders in the production kitchen, piping, baking, tasting and testing new ideas, and their shop on East 9th Street in the East Village, where the macarons share the counter with macaron ice cream and cheesecake sandwiches, matcha and coffee.

How a BKLYN MAC is made

  1. Fold

Almond flour and meringue, folded by hand until the batter flows just right. Fold too little and the shells crack; fold too much and they spread.

  2. Pipe & rest

Each shell is piped to size, then left to rest so it bakes with a smooth, even top.

  3. Bake

A careful bake for a crisp shell and the soft, tender center that makes a macaron.

  4. Cool, fill & finish

Shells cool on the rack, then get fillings developed in-house and the toppings or edible prints that finish each one.
